My brother raises beef and he passed all his unwanted cuts off to me. I have this beef tongue in the freezer and want to know if any of you all has a good recipe? From what I understand, after you strip off the outer membrane, it looks like a regular chunk of beef. I was thinking of brining and smoking it, but if anyone has a recipe worth trying, I'm game. I also have a beef heart, not sure what to do withthat. I was gonna feed itto the dog, but the dog is no longer.

I have had it once. My late grandpa and i butchered a couple beefs when i was 14 or so. My ol granpa was a freak and always went for the head to get the tongue and cheek meat while most everybody else would be oogleing the back strap, lol! There we would be standing and we would see granpa walking towards the head with a knife and hatchet!

Granpa took the tongue and boiled it and yes, stripped the outer "taste bud membrane" from it. If i remeber, he then broiled it. It was probably the best meat i have had aside from the ribeye from one of those calfs. Looks just like a roast and we ate on it for a few days afterwards making roast beef sandwiches.

Its was too long ago to remember the recipe, sorry, but you will enjoy it.

I worked in a meat dept while i was in highschool (and learned to butcher :D) Tongue is one of the most tender pieces from a cow.

needs to be prepped exactly as the guy i quoted suggests.

Yup boiled, even better if it's simmered in chicken or beef stock, then sliced on sandwiches.

Yep, when I was a kid my mom made it like this, made great sandwiches, she left the outer membrane on, remember I always wanted the end sliced off and I would run around sticking the cow tongue out of my mouth like it was my own.

I have eaten it when I was a little kid... the poor folk get the "leftover" cuts of meat.

Most of the taquerias around here serve lengua burritos and they are very popular.

Don't know of a good recipe, but there's another way to eat it, I guess

hahahah! So true. If people actually saw how and what ground beef is made from, a lot probably wouldn't eat that either.

I've got no problem eating tongue. I've never tried it, but I'm not squeamish about it. I'll try just about anything. I was just wondering if it needed to be prepared some special way. Same with the heart. If someone know a good recipe, post up. Thunder, breaded & deep fried? I'm game, I'll eat almost anything thats deep fried. I don't know what my brother's problem is with the tongue, something about it being able to taste him back. It's free beef for me.

Yeah, but cows don't stick their abdomen/legs/ribs up their nose on a daily basis, do they? :D

Nah, I'd probably eat it anyway.
