BBQ sause, what\'s your choice ???

I like the Jack Danials grillin' sause, and the KC Masterpiece original. Sometimes I make myown, but on the beer-brat I grilled for lunch today, it was the KC Masterpiece.

I like The Jack Daniels stuff along with Stubbs. I bought some BBQ rub from a guy on Pirate4x4 http://www.texasbbqrub.com/ and hope to get it before next Thursday since I am hosting a work bbq at my house.

No sauce, rub only. I think true BBQ deserves a rub, if I'm going to GRILL something (like a chicken breast) I may put some BBQ sauce (Rudy's is the best). If I'm going to actually BBQ (under 275 deg. 2+ hours) I use a rub to seal in the flavor and make a bark throughout the cooking process and finsh with a sauce if someone demands it.

If I HAVE to use sauce though; tomato based, Rudy's is the sheeeit, vinegar based (Carolina style) I usually make my own.

KC Masterpiece, Bullseye, Bill Johnsons, and a few others are the only ones I will use.

The best sauce I have ever tasted was from Serious Texas Barbeque in Durango Colorado. It was amazing. I have a pint in my frig right now. /forums/images/graemlins/thumb.gif

Re: BBQ sause, what\'s your choice ???

For Me it all depends on what Im grilling. I like a good rub on beef. I make My own rub I use kosher salt, paprika, pepper corn, coriander, musterd seed, celery seed, garlic powder, onion powder and a few other herbs depending on the mood Im in. I just put it all in a blender and grind it a bit then rub it on. What ever I cook I will sear each side for 5 minutes over direct heat to form a crust and I always use tongs cause a fork will puncture the meat and let all the natural juices out leaving the meat dry.
For sause I make my own as well. I usually go with a tomato base then go from there. Sometimes I will use bourban for a diffrent taste but for the most part I just keep it pretty normal cause I like to taste the meat.
I also grill fresh sea food at least once a week I dont get to crazy with it cause when it's fresh it dont need much. One of the reasons I love living near the ocean plus My Boss lives right on the beach so I get it all free /forums/images/graemlins/thumb.gif /forums/images/graemlins/thumb.gif

not quite BBQ sauce, but i found out a really good sauce for hot wings. take a quart mixer, fill it with cayanne(sp?) peppers, then fill it completely full with franks red hot sauce. add fresh ground pepper to taste. guaranteed to burn twice... /forums/images/graemlins/yikes.gif

I like liquid smoke and tabasco smoked chipolti <sp?>
