    This is a really dumb question but i just want to double check. I redid my entire cooling system and now it takes forever for the Jimmy to warm up. I am just about to install a new thermistat. The Gasket goes OVER the thermistat right?

    Yes, the thermostat should sit in a little depression in the intake manifold, then the gasket, then the water neck.

    tRustyK5 is correct. If you want to use a sealant, I recommend a product called Copper Coat. It's a liquid and comes in a small can with an applicator built into the cap. I've used it for many years and never had a leaker. Most auto parts stores sell it.
