Hey Canmore, (Seen any Rabbits?)

    RABBIT STEW

    Recipe By :
    Serving Size : 1 Preparation Time :0:00
    Categories : Meats Main dish
    Stews

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    3 Rabbits cut into pieces
    1 c Flour
    1/4 c Olive oil
    1/2 c Onions, chopped
    2 Garlic clove, minced
    1/4 c Wine, sherry, dry
    1 c Chicken broth
    1 c Game marinade, strained
    1 t Thyme
    1 t Sage
    1 t Cayenne pepper
    1/4 c Parsley, minced
    Salt & pepper to taste

    Dust pieces in flour and shake off excess. Brown in olive oil on all sides
    in a large black iron pot (My prejudice). Remove and keep warm. Add onions
    and garlic to same oil; cook until clear, not brown. Drain off excess oil
    and replace rabbit. Pour on sherry. Add broth and strained marinade. Bring
    to boil then reduce heat to simmer, covered, for 1 to 1-1/2 hours.

    Yeah, we have rabbit problems in our downtown and South Canmore areas. Some goof let a bunch of his rabbits go about 15 years ago, and ever since they've been causing problems. On a warm summer night you can drive down any block in this part of town and EASILY spot a couple dozen of the varmints.

    Their biggest allies? The "leave the poor animals alone" barkeaters. They are very vocal and refuse to support any initiative to deal with the issue. They're just typical rich, clueless people, and unfortunately, they outnumber the rabbits here........:surepal:

    I dont know about your rabbits, but Darwin is strong with our cotton tails. I run over a couple of dozen every summer. My dogs have killed 2 so far in the backyard too.

    Ah yes, the usual 'tree-hugger' over population problem.

    Maybe you can get rid of them and the bunnies! :)

    Shoot, I was just excited to see a news story about Canmore. Just one more way CK5 influences my life!
