    I did it! PICS ADDED

    I FINALLY got time to start smoking fish.
    I semi-filleted the salmon at 8:00, then at 9:00 the brine was mixed and the fish is in the fridge in the brine until morning. Then tomorrow at 2:00 (after the showing on the house) I will smoke it until I go to bed.
    i had a pic of the brine, but my mouse upstairs died. so I cant put it on the PC
    anyways...

    mouse battery is charged, but the camera battery is deadly low, so I will post it up tomorrow morning.

    opps, I made a mistake in another post...my smoker is acutally a totem smoker, not a little cheif. Sorry.

    more to come, got to go put the fish in. it has to smoke for at least 8 hours, i'll be up late tonight:blush:

    carcinygin? don't know what that is...
    why could it give me cancer? I'm not inhaling it?
    I'm burning 1/2 alder, and half apple wood chips if anyone wants to know. And the smoker is electric. The bowl of chips sit 1" above an electric element.

    This won't last my family long, but when I make more, I could send you out some. probably be rootten the tim you got it though :grin:

    dry ice dood dry ice!!!
    when i was a little little kid and lived out in bc my mom would mail smoked salmon back on dry ice!!!



    carcinogen, as in causeing canser, your not breathing it but it is IN your food.


    if you buy smoked meats it is actualy listed as an ingredient

    I don't have dry ice though!
    How bad is it for me? I don't think it will hurt me, its not like I am eating it every day.

    Haven't had any yet...
    still have approximently 2 hours!!
    so far I have changed the chips 2 times (once every 3 hours) and flipped them twice.
    They look gooooood.
    I'll report back at midnight when they are done:blush:

    ahhh
    went and checked on them and the thiner pieces were a little bit too smoked, so I shut the thing off and took them all inside.
    All I can say, it was DAMN well worth the effort. Tastes AWESOme

    When me n my dad smoke fish every sumer the bears get awefully close to the house :D I can't wait to get back n do soem salmon fishin this year..I'll have tons of pics to psot up.

    Steve whatcha usin in yer brine?

    i'll try to remember...
    1 quart of water
    3-4 garlic cloves
    3 ounces rum
    3 tablespoons pickling spice
    1/2 cup pickling salt
    1/2 cup sugar
    teaspoon lemon pepper
    1/8 cup lemon juice


    and there might be more. but thats what my dad used and it was gooooood. I tried and it was good too!
