I need your salsa receipes, anything that contains alot of tomatoes

    We had four plants go ripe this year and I dont eat tomatoes unless its salsa or ketchup! /forums/images/graemlins/histerical.gif

    We pulled a batch like this last week and should have another next week, the folks are tomatoed out /forums/images/graemlins/histerical.gif:p

    I'm thinking about tossing them in my 6 cup 500watt margarita blender with some salantro, peppers, onions and canning some. Will it hold in the refrigerator very long?

    post up some receipes using tomatoes
    If anyone around here wants some tomatoes come get them /forums/images/graemlins/waytogo.gif

    about 2 1/2 - 3 hours, I'm just north of Indy about 45 minutes on I65.

    a few of these are about the size of you fist a couple are a little bigger

    Salsa Recip:

    1) Roast on a skillet or pan for or five tomatoes until skin is black(keep turning). Skin needs to be black for roasted
    flavor to come through. Once done, while hot, cut both ends off of tomato and place in large bowl

    2) Roast 4-5 Serrano peppers(their green) and do same, blackening on all sides. Once done, cut open and remove seeds
    less or more to control heat. Then slice and dice. Place into bowl with tomatoes.

    3) Chop up lots of washed cilantro and throw in bowl, now mash tomatoes while they are still HOT so that all the juices
    and pulp mash easily with burnt skin

    4) Chop some white onion and add to your liking

    5) Add salt, don't be shy, this brings out great flavor, just keep adding and tasting to you get what your like

    6) A dash of lime juice is always good, but optional

    Enjoy.

    no, it adds great roasted flavor! does not taste burnt in anyway. Its part of the taste so if you remove it you loose
    alot of flavor. /forums/images/graemlins/waytogo.gif
