I know its normal to have the 208 hanging low on a 84 K5, but do they make some kind of strike plate to protect it? I have seen other K5's with a plate around the TC. Mine does not have it. Is there somwhere I can get one? I am afraid I will mess up the TC when wheeling.

Also is it normal for all K5's to have the springs on top of the axles in stead of under? Just wondering. Cause mine is like that.

Yes, that's how all K5's are, with the springs over the axles. You could try to score a skid plate from a junkyard or have one made. Another option is to "clock" the transfer case, which is effectively shoving it up farther under the truck. I don't know anything at all about how to do it though.
