I love the damn things, but up here on NY we can only seem to get the chedder filled ones, which suck.
I have tried a few times to make cream cheese ones but the breading comes out wrong everytime.
What do you do to get nice thick breading that actually sticks to these things?

Go to the store and get tampura batter or beer batter, it comes in paper sacks, just add water. Poppers are battered not breaded.

    Don't bread 'em....

    Texas style....

Cut the tops off ,, scoop out the seeds,,
Mash together a little cream cheese,,green onions and some chopped up smoked duck or smoked quail meat.

Stuff into the peppers,,wrap with bacon and run tooth picks through them to hold everything together,,,throw them on the grill or smoker for 15-20 mins....

crack open a cold one and chow down !!
