Tire Question for the K2500 \'Burbon

I see plenty of people here telling about fitting the 285/75r16's and the 305/70r16's under their trucks, but all seem to be talking about the 1500 series with the stock 16x7 wheels. My 1999 k2500 'burbon has the 8 lug 16x6.5" wheels. I will be upgrading to 16x8 wheels, and was wondering what offset I should use, and if I will be able to fit the 305's under there. Has anyone here actually done this with the 2500? I don't want to do any suspension mods at this point, that includes adjusting the torsion bars.
