My wife makes 'em for me sometimes. Hash browns, good spicey pork sausage, velveeta cheese, eggs, and bacon.

There was this food cart in downtown Fresno down by the county health department that I would get burritos from every so often.

The egg burritos were pretty good, but had a little extra grease to make it go down easier. They also had steak burritos that had just enough spice to clear the sinuses :D

Anyone have advice on how to make one? Is it basically a omlette wrapped in a flour toritlla?

ok so first you mix up all the stuff in a bowl, i used 3 eggs, lotts of tilimook pepper jack cheese, garlic salt(cause i diddent have real garlic), montreal steak seasoning(salt free), lotts of tapito hot sause, and some peppered salami, I usually put onions and bell peppers in ther to but i diddent have any, and you can sub. the salami for any kind of breakfast sausauge or what ever you want, and the more stuff you put in the more eggs you need to cover it all, than you have leftovers if it just for your self, but those are good to.
throw it in the pan, i let the eggs sit for a little bit they absorb all the flavor of the other stuff, and i like to cook it on high, just because its faster:D
    [IMG]
if you cant get home-made tortillas, i like these the best, my grandmother is mexican, she makes the best home-made ones, holy crap they are wicked good.
when the eggs are pretty much done cooking throw the tortillas on top of them, this steams them and makes them soft and easy to roll up
    [IMG]
than just pile the egs on there, roll them up and enjoy

stay tuned next week when i show you all how to cook mac and cheese,
on the Miniblaze CK5 cooking network:thumb:
