My wife makes it with chorizo, ground beef, steak, beans, several kinds of peppers and a cinnamon stick. (I know, sounds wierd but it adds a great flavor)

I'll see if she can e-mail me the recipe and I'll post it.

Your gonna need a house, (to make sure its a house just pull back the skirting and make sure the wheels are removed) a big screen with the scifi channel on, a ragdoll cat,( this can be substituted with a ragdoll, a cat, hellow kitty paraphenalia or just some plain ole pussy)Some pink counter tops( if you have to use a substitution for this ,it requires you to wear a tampon on your head til the chili is done), some light houses and finally your Mom has to live with you, although if you happen to live with your Aunt this also will suffice. After having gathered all the ingrediants, go to the store( with the tampon on your head ofcourse) and buy a can dumbass...Make sure its vegetarian though or the rath of Camster the Hamster will be swift and unrelenting...:doah: :haha: :D

    Here ya go:

    Kick Ass Chili

    2 tablespoons olive oil
1 pounds sirloin steak, cut into 1-inch cubes
    1 pound ground beef
    1 pound chorizo
1 large yellow onion, coarsely chopped
    3 tablespoons chili powder
    1 tablespoon garlic

    2 tablespoons Essence
    2 teaspoons cumin
    1 teaspoon dried basil
    1 (14.5-ounce) can beef broth

    1 Sam Adams
2 (14.5-ounce) cans whole tomatoes, drained
    1 cup cilantro, chopped
    1 cinnamon stick
    3 bay leaves
2 green jalapenos, slit lengthwise 3 times each (or habaneros or anchos or combo))

2 cans kidney beans, drained and rinsed
    ½ cup red wine
    Essence,Salt and pepper, to taste
Garnish with Cheddar and sour cream, if desired.

Place oil in a large, heavy pot over medium heat. Brown the sirloin in batches. Remove to a bowl with a slotted spoon. Add ground beef, chorizo and onions to the pot and brown. Make sure to break up the meat. Return sirloin to the pot. Stir in remaining ingredients, except for garnishes. Bring to a boil, reduce heat, simmer for 2 hours. During last half hour add beans and wine. Stir occasionally, breaking up tomatoes. Before serving, discard cinnamon stick, bay leaves and jalapenos. Garnish, if desired.

This stuff truly does kick ass, she won the Mesa County Chili Cook-Off a few years back with this recipe. Make sure not to cut the peppers too much, if the seeds get out and into the chili it's an ass burner.

    What's Essence?

The alcohol might be tough for me, being a non-drinker and 19- is a can of Sam Adams or a bottle? Can I do without the wine?

No biggie, the alchohol cooks off, it's just for flavor, and if you can't get any due to age just skip it, it won't make too much difference. If you do the the Sammy, can or bottle, no difference.

Should be able to buy a single, any kind of full bodied beer will work.

As for essence, it's a mix of spices that Emeril uses (you know the "Bam!" guy), but here's what's in it, makes about 2/3 cup of it (and it's good on lots of stuff):

    2 1/2 tablespoons paprika
    2 tablespoons salt
    2 tablespoons garlic powder
    1 tablespoon black pepper
    1 tablespoon onion powder
    1 tablespoon cayenne pepper
    1 tablespoon dried oregano
    1 tablespoon dried thyme

    OK, Done.

TSGB: don't get the jalapeno on your hootus.

Hey, fumes gave me an idea, you gotta have friends that drink, tell them to buy the beer and you'll feed them all chili, it'll take you days to eat that much anyway.

Turns out you can, at any Safeway. Grab a bottle out of a sixer, and away you go.
