who can make fried rice?

    i really REALLY love chinese restraunt-style fried rice. Problem is, I have tried a few recipies off the web and it always turns out like ****... not even close to the cool restraunt flavor. I don't want something that someone might think is better than the standard take-out place type rice... I want as close to what they serve as I can get, but made at home.

    Anyone make their own? hints/recipies?

    Cook rice about 80-90%, fry up a few eggs, toss the rice in the skillet, throw in any extras you want (meat, peas, etc), add soy sauce to brown.

    Fried rice.

    I love fried rice !! make it all the time..

    my .02

    I use peanut oil in the wok,( won't burn at high temps ) ,cook like jagged said..eggs,,rice...1-2 Tablespoons of butter.

    throw in a few snap peas, handful of bean spouts,diced bamboo strips and water chestnuts,,some frozen carrots and peas,,some cooked chicken, shrimp, beef, pork, ham what ever you got leftover....douse with soy sauce


    stir in a little sesame oil or chilli oil at the end and chow down :D :D :D


    OH !! and use REAL COOKED FROM SCRATCH RICE !!! not that instant or boil in the bag shiat...it will just turn to mush...

    Yes, actual rice. I prefer short grain.

    ok cool... I'll get some groceries and try this out this weekend. I like rice and LOVE fried rice... so hopefully this works out. There will be updates, with pics. :grin:

    Remember when you are cooking it, refer to it as "flied lice" for the authentic Chinese restaurant feel.

    bump.

    Finally figured this chit out. lol! The first time I made it, I didn't have any good veggies, I only used 1 egg (seemed like enough) and I had to use extra-vag Olive oil (all I had on hand). Well, it turned out only so-so. :(

    Next round I got the right tupe of onions from the store, used 2 eggs, and busted out the Ming Sai (sp?) approved grape-seed oil instead of the recommended peanut oil. Worked awesome. I used a little bit to much oil and soy sauce.. but its 90% there with respect to "just like the restraunt".

    I can't eat peanut oil cause of my jacked up kidneys, so the grape seed oil was the perfect alternative. It has loads more good anti-oxidants than olive oil does... and you only need about 1/2 as much in any given recipe. Pretty cool.

    The only dietary "downside" to this whole thing is that I'm not supposed to have lots of sodium in my diet... and soy sauce has eleventy billion mg of sodium. doh! Not to worry though, I went to Wally World and picked up a bottle of Kikkoman's low sodium soy sauce today. w00t! :grin:

    For round 3, I'm going to add some bits of chinese-style sweet/sour pork, a little less oil/soy sauce... and I oughta be golden. Can't wait. :thumb:

    btw, where the **** do you get short grain rice? I was at WW today, and they had a dozen or more brands of long grain... but I didn't see any short grain at all. There was one brand that was "medium grain"... the grains were hardly shorter than the long grain ****... and they were about 3x as fat. Doesn't seem like the same stuff the restraunts use...

    thats what I always call the Extra Virgin Olive Oil in the presents of my wife. ;)

    yeah, chinese restraunts seem to find massive quantities of short grain rice don't they. hmmm... me thinks i need to try a better store than Wallyworld. lol! Its still weird to me that they had over a dozen brands of long grain but pretty much nuttin' else.

    I was told one that you cook the rice a day before, then use it to fry up later. I love fried rice
