I have a couple of them, but they're both rusty. just surface stuff, no pitting, but how important is this with the seal? I've 'heard' that it has to be almost polished or it will tear up the seal. In my mind just a good cleaning with a wire wheel will be fine. Any experience?

I don't see any reason why a healthy dose of emory cloth won't fix that. Clean it up smooth and make sure to 90w the seals before you reassemble it.
