I went with Doug Thorley headers. Not the current headers called Doug Thorley, but Doug's Headers http://www.pertronix.com/prod/ex/dougs/default.aspx. Doug Thorley lost his company in a divorce and so he went and started Doug's Headers. The quality was very good on mine with very thick flanges and good ceramic coating.
What's your budget? This is a huge factor as headers like you're describing are going to be $400+ so don't think this will happen out of a Summit catalog for $200.
My vote is for Sanderson headers, they're not chrome or stainless but they do offer coated versions. Extra thick flanges that aren't supposed to need actual gaskets, only rtv.
I bought some shorties for a big block and they fit perfect with room to spare.
stainless, your only choices afaik are going to be Hookers, the Edelbrock TES's or custom... i was gonna run the Hookers, but have since decided to run L&L's..... as mentioned, Thorley's are another quality header...
I have almost $700 in my Sandersons + HPC. One mistake I made was not buying them precoated. I originally planned on painting the headers but they were so nice I decided to have them coated after the fact, this cost me an extra $100~$150.
