Is there some software or another method that will help me estimate my engine's HP and torque?

there is a program called desktop dyno, its a close guess on power. you can get it from any of the big names. summit, jegs etc..

I've used Desktop Dyno quite a bit but I feel Engine Analyzer does a better job.

I started with nothing and I still have most of that left! - <a target="_blank" href=http://www.echobit.com:81/k5/> Pictures</a>

Those "g-tec" meters actually work! I borrowed one after I got my new engine. It was within 15HP of the GM dyno sheets. That could easily be gotten with more tuning, different exhaust, weather, etc
