the seats for the u joints on my pinion yoke are all warped and eaten out, so I need to replace it quickly so I can get to my summer job. If i just pull off the bit nut and replace it, what kind of specs do i need to torque it to?

This is real hit or miss since you are dealing with a crush sleeve in there.

I've done this a few times though, since I always ended up in a hurry as well.

Take a nice big breaker bar and torque it as tight as you can without mechanical assistance.

Some will say count the exposed thread before removing nut, but I doubt that ends up being accurate enough either. At least compared to the way you are SUPPOSED to do it.
