We are the same way with camping. We have a family of 6 and we easily fill the bed of my crew cab long bed dually super duty when we go and we have to bag everything to keep it from getting super dusty. I need to get good sleeping bags so we don't bring extra blankets and I need to get totes and do a complete tent camping setup so we can just grab all that stuff and go. We have been trailer campers for many years and have been getting more and more into tent camping.
Totes, pelican cases or other plastic cases are the way to make packing quick.
Even before I got the camper and was using a tent I used totes at least. One is ease of packing but the other benefit is with the lid on they are water tight enough that if it rains and they are left outside gear isn’t going to get soaked.
Now I have a pelican case with wheels my cooking gear is in. Just toss it in and go.
I tend to overpack too. But each time I go out I try to take a note of what I used and didn’t for the next trip. I’ve slimmed it down some for sure.
