I just got a set of 33x12.50's but I've still got my old 31" spare. Would it be ok to just use the 31" as a spare to get me to a tire shop (like the space saver spare many cars have) or would driving with a 33 on one side and a 31 on the other damadge something?

In the front with the hubs unlocked , sure
