The three I lost had nothing to do with bind, and what about operating angle and wear on the needle bearings? Usually something that happens all the sudded is far from sudden at all and probably had signs that it was getting worn or was damaged before it failed. Operating angle will not BREAK joints catastrophically. It might wear faster, especially if not lubricated, but it's not going to break catastrophically from increased angle of operation. Increased angle DOES make it more likely to bind though.
Wear, as you said, not all of a sudden and catastrophic failure.
I guess I pay more attention and notice things more than the next guy and there is no way a worn out u joint would break before I replaced it. I love loud music just as much as the next guy, but you've got to pay attention to what's going on with your truck all the time, too. I see your point though, if you let it go until the joint broke it might seem like a catastrophic failure.
But, binding will destroy a u joint QUICKLY, like right now. It doesn't matter if they've been in there 20 years or 10 minutes. If the yokes bind, it's going to snap.
