1/4 panel removal??

im gonna try to do a step by step w/ pics when i do my build thread but im no auto body guy, im just a dumbass w/ a 110v welder and a socket set. ive yet to see a thread were someone strips the tub down to the roof,firewall,to the front of the back seat.
yunit did a thread replacing the cargo floor while leaving the 1/4s on. i dont recall seeing a thread on removing the 1/4s w/ pics.

I'm a little worried as to what I will find in the front half of the cab when I strip it. I know I have a small hole on the side of the ledge as pictured here (don't know what that part is called), not really a floor pan but side pan :

can we buy this piece? or just use a chunk of sheetmetal?

somewhere in my build thread are pics with qrters and cargo floor gone... factory qrters, custom floor... think it's about 1/2 way thru...
