I did that on my 81, took the bench out and put some seats with arm rests in but know i want bucket seats 
Try to find something off a 2-door so that you have a flip or fold feature to access the back. In theory anything can be made to work if you don't mind fabbing some mounts/adapters.
I actually hunted to find seats from a '90. I like the Blazer seats because they are fabric on the front and vinyl on the back. This works for short rain showers and such unexpected events.

As luck would have it I already have a thread about this very subject.
I actually found a set of seats out of a '90 on eBay. The guy's even in the same state as me and is coming up here on vacation in a few weeks so he's bringing them up and delivering them.
