May be check lmc to see if they have the skin and you could re-cover it. I hope shop is picking up the tab
 
Long shot, but how about. Chevrolet / GMC.... possibly some NOS ?

Possibly katskinzz... They make OEM replacement leather.

I'd be persuing a claim against the shop that did the damage.

Last GM OEM seat panels I priced were shocking.
Would 't shock me to see a $500 - $1000 quote for the parts.
 
I know this is a long shot, but have you considered taking the seat to a professional carpet cleaning facility that does couches and chairs ? It seams to me that there should be some type of solution that would clean dissolve the grease and not damage the fabric or coloring.

Just a thought and man I know how pissed I would be if this happened to mine ...
