4MV Quadrajet to Manual Choke

I have a '78 Chevy K10 with a 4MV Quadrajet. The choke does not work properly, so I have left it wired open all summer. Now that it is cooler I am having difficulty starting it. I tried to replace the choke thermostat, but the screw mounting it was stripped and I am tired of messing with it. Would it be difficult to convert this carb to a manual choke? I found several kits like this one from Dorman, but the description is pretty vague. Thanks for any help.

That Dorman kit is kinda hokey. I've used them before and they suck.
