The only thing that could cause that much fuel in the pan is a leaky injector, or more likely multiple injectors by the amount of fuel in the pan.So hopefully no serious damage?

If you have a fuel pressure gauge, hook it up and turn the key on. Take note of the pressure reading. Shut the key off and watch your pressure. Normally, it will drop a couple of psi key off. It should hold some residule pressure on the line. If it's dropping to zero in less than 10 minutes it would be smart to look at the injectors closer.
7 extra quarts of gas in the oil and you say you might have a couple bad ones... That's the understatement of the year. A couple leaking might make it a little hard to start or have to cycle the key a couple of times in order to get enough fuel in the line for it to start. 7 quarts of fuel much more significant than a couple of leaky injectors. It has to be doing this while it's running. I'm surprised it's not setting a bunch of rich fuel trim codes.When I built the harness and installed the motor I checked that, it was holding 42 psi for 3 days with no drop. But now it may have developed a couple bad ones.. we’ll see if that comes up again. I’ll keep an eye on the oil

All I'm saying is you fixed the symptom, but not the cause. Sure it's starting and running like normal now because you drained all the fluid from the pan which was high enough for the crank to be slapping the fluid each time a counterweight swung around. I know KOH is on the brain at this point, but I don't think I'd road trip this one until the problem is sorted out.
I believe this was an isolated incident. If not Ill be the first to admit I was wrong.
