85 K10 Issues Shifting

So long story short I put a brand new crate engine into my truck and took my time doing it now that I have fixed my breaks and can actually drive it I took it out on a test ride with my mechanic friend and ran into some issues

I have a 350 and a 700r4 with 4.56 axle gearing running on 33x12.50x15 wheels I also have a 670 CFM holley carb I included all this because I dont know what is relevant and would be needed
When we first started riding around everything was ok doing 25 around my neighborhood just to check it all out
We then went out on a road with that was 50 mph and I was getting it up to speed I felt it shift up a gear then loose all power so we took it back and checked the kick down cable was still hooked up and everything which it was
We go back out to see if it does it again which it does this time i pushed the throttle down more and it started to flood the engine out so I let off let the speed and RPM's go back down and went to get up to speed again this time it shifted and I felt power lose but not as bad as the first time where I pretty much had nothing once it shifted and was able to get up to speed.
We went out and tested this a few more times same thing kept happening where as soon as it would shift I would lose all power and if I went to hit the gas hardly at all It would flood out.
He doesnt normally work on older stuff but he said hes pretty sure the transmission is shifting at to high of an RPM causing the engine to run at a lower RPM after the shift and not be able to take the fuel and make power and I had my carb tuned and my timing done by his dad who used to have a 350 700r4 trans in a old race car the fuel mix is good any less fuel and I risk running lean and leaning out anymore and I will be running rich im in the sweet spot but anyways my buddy does new porsches, BMW's etc so he knows about cars and his dad isnt able to come help anymore due to family reasons but I know you guys love these trucks and know a lot of the issues and how to fix them and this is the final thing I need to get fixed before she is done

the 700 has a TV cable, it's not a kickdown cable and it needs to be adjusted properly otherwise you'll damage your transmission. Do a quick search online and you'll find videos how to properly adjust it.
 
Kinda' hard to decipher what is actually going on in your post. Regardless of the how the transmission is adjusted it shouldn't make the engine truly "flood out" or run poorly/differently. If the transmission is upshifting too soon it could cause the engine to bog down, just like if you were running in too high of a gear in a manual transmission.

As stated about I would check the TV cable and make sure it is set up correctly. When you mention an aftermarket carb the first thing that pops into my head is the bracket could be wrong or the cable not adjusted correctly.
