AC delete???

Only risk would be the clutch locking up and tossing the belt. If you remove the belt it's just extra weight you're carrying.
 
Usually yes but it depends on your belt set up. I have a serpentine set up so I need to use an a/c delete pulley (~$30 at O'Reilly's) to make the belt routing work. Most V belt systems will allow you to just remove the belt.
 
If you're not going to be using it you'd probably be best off removing it. You may want to use it later and there's no sense in it sitting there spinning and not doing anything.
 
My vote is for removing the A/C pump.
The GM part number for the delete pulley that I am running in my 1990 TBI motor is: 10118713
It runs $50-ish.

As for the belt, I simply purchase the "no A/C" option and run a NAPA micro-V AT 25-060938
