Does anyone know if I can just plug in an OEM door harness under the dash to add factory electric locks (after adding the switches and solenoids of course). Does the wire harness under the dash already have the necessary plug into to just add locks?

I'm pretty sure they do not have the wiring there if the truck didn't come that way originally, unlike what seems like is standard on most new vehicles.
Would have to add the PDL solenoids in the doors, door jamb cutouts/protective "boots" for the wiring to the doors, add the wiring harness, and figure out how to power it through the convenience center as I recall, that is where the relay is that controls them. It would be a fair bit of work if the dash wasn't pretty well stripped.
The factory installed whichever harness the spec sheet called for, depending on if it was power windows, locks, and mirrors. ( '90-'91) At least from what I have found. But most of them seem to have gotten electric windows and locks together, but I found a few with just the locks.
So it seemed to me that the wiring was bundled to each option package, but it was separate from the main harness.
