The door weatherstrips had black goo / tar-like stuff to stick them to the lip on the body and for the life of me I can't get all of it off? I've used alcohol, Goo Gone and brake clean so far, some has come off but there's still a sticky smeared film to get off.

Cleaner suggestions?

Acetone maybe? MEK dries a little slower

I'd try acetone first since MEK is pretty wicked stuff. Just read the MSDS on each. We used to have a department in our shop that used MEK and the precautionary steps to provide for safe usage was pretty extensive. Just to be safe.

We use 3M Weatherstrip Adhesive Remover since your not in California go get what works best.
California residents can't purchase this product. 3M also has Roloc disc wheels for removal.

eraser wheel works great on the gunk and hard to burn the paint with it so its real paint safe .

norton also has the wheels .
