Real off-camber stuff scares the shit outta me without a cage and harnesses. Will I be ok doing Hell’s Revenge, Kane Canyon and Steel Bender?
Or should I just stick to Long Canyon on Saturday?

All of the trails you have listed are no big deal without a cage. Lap belts are a minimum. Most of the rigs do not have a cage.
You will be fine. Plenty of regulars on the trails who can spot you if you get nervous or intimdated.
