I was seeing if anyone knows what gauges I should buy for tuning my carburetor correctly

Thats good for idle, but part throttle and WOT, would be best done with an 02 sensor in the exhaust.

Vacuum gauge will tell you many things about the condition of your engine. I would buy a vacuum hand pump. it will test dash pots and such plus work as a gauge.
When adjusting the idle mixture screws turn the idle speed screw down so the engine idle a slow as possible reasonably smooth. Adjust each side for highest manifold vacuum reading. When done with idle mixture screws, set idle speed, check timing adjust as necessary, reset idle speed. Do this on a warm engine with choke fully open and step cam off.
