So last night on the way home from work something catches my eye and I look down and see the CEL on and no more then 15 seconds of me saying "WTF NOW" it goes off. Are these trouble codes stored? Or am I SOL until it stays on.

They are stored for 50 starts or until the battery is disconnected for a few mins.

Code charts are here: http://www.gearhead-efi.com/gearhead-efi/doc/TBIcodes.pdf No idea if the truck EGR is identical to car or not, I'd want to verify first. I don't know if the trucks had a diagnostic switch, I somewhat doubt it, probably all done with the MAP sensor.

The EGR's on chev engines this vintage tend to plug up with carbon, based on how EGR is "tested" by the ECM, it seems likely plugged EGR passages could cause that code.
