Will a hydro clutch and pedals from a 94 K2500 work in my 78 K5? This is my donor truck that is gonna supply it's 6.5 TD and NV4500 to my build. Or am I gonna have to track down 85-91 parts?

Simple answer no. The 88 up trucks the clutch pedal is a separate piece from the brake. Were as the the 73-87 trucks is all one piece.
