Driveshaft angle for CV conversion

The angle finder on the diff rib says 13.7, on the driveshaft tube it says 22.

Technically, with a CV shaft, the pinion angle should equal the shaft angle. I think the pic shows the pinion angle is closer than 8 degrees off than your measurements indicate. I suspect the casting web is not in line with the pinion itself.

Retake the measurement for the pinon off of the yoke with the u-joint trunions oriented top/bottom. Take the reading off the bottom u-joint cap and then the bottom of the shaft. They should be a lot closer.
 
I did one and set pinion almost 2* below inline . Under power it walks up a bit . 70-80 mph drive on 37" tires was fine . Had 5-6" rear lift on a blazer with nv4500/205 .
 
Not sure the the rib is a good measurement. The best is the pinion trunnion, as Zoo mentioned, the diff cover flange should be the same plane as the pinion.
I have mine less than .5 degrees, it had an aggravating vibration at 2 degrees. My drive shaft is 63" long and 4 something inches diameter
So your results may vary.
 
While not a good picture… given the new position of the axle, the pinion bearing looks like it would live high and dry almost? Is there enough splashing that takes place in the diff to where I’m good, or do I need to add another fill bung higher up on the cover? Also, there’s no vent port that I see on the diff, should I add one on the cover as well?

You would think with the nose-high attitude. Keep in mind how a diff gets lube up to the pinion. Rotation of the ring gear throws fluid up and forward bathing the pinon bearings. You can add a little more fluid if you want. Too much and you'll just be churning the oil and foaming it up. I'd start with a 1/2 quart.

It should have a vent near the top of the housing already.
