Is there a formula that one can use to calculate the safe side to side angle a truck can be driven without fear of tipping? I know this changes with speed, etc. etc. But there must be somehow to figure out how steep of a angle you can go safely, and how steep of a angle you can go totally before tipping.

I am sure that there is a formula but you would need to know much more that how heavy and tall the truck is.
Think COG and the weight at each corner static and dynamic for a start....

Or you could get a cage and experiment.

Yeah do some searching for denter of gravity location. Once you find your exact center of gravity you can determine the roll factor, but it only applies to a static truck. If you are bouncing or spinning tires on an obstacle there are outside factors that will affect it.
