My dual saddle tanks hang down way too low. What tank would fit in the rear between the frame rails?

You could fit any Blazer or Suburban tank between the frame rails (suburban tanks only on longbeds). If you grab all the brackets with the tank they can be modified to bolt into the pickup frame as well.

That's what I figured. I'll have to run new lines to it and bypass the tank selector, but will it make a difference if the tank comes from a diesel? And did any pickups come with rear mounted tanks?

Diesel and gas tanks are the same. Just use your sending unit so you get the water/fuel gauge working.
I have gasser sadle tanks in my C10 and will be adding the rear burban tank soon. I think I will be able to go from coast to coast on one fill up. :D

Are you interrested in selling the tank selector ? I am going to need another.

But would the sending unit from a 20 gal. saddle tank work in a rear mount suburban or blazer tank?

I'd sell it to you, but I won't be doing the tank swap until the summer.

I think it does but I am not 100% sure.
I know the 16 gal saddle fits the 20 gal it just stays on full for a while longer befor dropping off.
