Edelbrock 750 or Holley Offroad carb?

I've got a 383 stroker with a full roller valvertrain in it. It also has a Edelbrock Victor Jr. airgap manifold. I am currently running an Edelbrock 600cfm carb and it isn't enough. Should I go to an Edelbrock 750cfm carb or the Holley Truck Avenger? What is easier to run and tune? Thanks.

Right now I have a Holley Truck Avenger. I'm having to do tuning: jetting and squirters mostly. Does work great on the trail.

If I were to buy a new carb I would get a Demon Carb's new Trucker Carb. I've had a Speed Demon and a Road Demon. Both excellent carbs, and you can tell they have excellent craftsmanship. If I would have known about the new Trucker Demon, I would have gone that route instead of the Holley.
 
Quadrajet. a little harder to tune, but will hold a tune forever, and will handle the angles a little better than the competition.
