i am doing a custom engine install and am getting ready to mount the tranny, what is a good angle to have the engine sit at in relation to the frame?
 
Don't worry too much about your engine angle. Get your trans/t-case where you want it to be so you can have good UJ angles.
As long as the dizzy ain't touching the bulkhead(or likely too) and your fan ain't going to cut a hole in your rad you'll be ok.
 
The stock angle for the driveline in my in my K10 is tilted 6* back with respect to the frame.
 
Back from my race car days you want the carb surface between 2-4* tilted backward.
