Im going to get the Pittsburgh hoist from harbor freight. But what is the best option for actually bolting to the engine? I’m going to be attaching the transmission to engine then installing.

Keep in mine the entire front is off the truck so I have a wide open space to get the engine/transmission in.

I use the leveler. It’s also great for hanging bumpers. Don’t need the extra set of chains with it.
 
I like the leveler setup for engine and transmission. I wouldn't try the one that bolts to the intake for that much weight. Only four 5/16" bolts holding it, and possibly into an aluminum intake.

What size and length bolts do I need? To lift from the block?

Assuming you want to lift from the heads, 3/8”. Length will depend on what you’re bolting to it (chain or brackets) along with any washers.

Would you recommend using washers and grade 8 bolts?
 
Buy the 2 ton hoist. Trust me. It's worth the extra $.

It’s about $100 more. Not sure when I would need a 2 ton lift. What benefits are to be had going 2 ton besides the added lifting weight capacity
 
Think about reach. Average engine is 500#. That lift is first physically smaller than the 2 ton, so has less reach to start. Then you can only extend it to the half way point and lift an engine. Which is AT it's limit. Most engines I've done I needed my 2 ton at LEAST half way, if not all the way extended to get it where I need it.
At half way with the 2 ton your still at 1000# cap.
Plus you will find that it is not an engine hoist. It's a shop crane. You will use it for a LOT of things lol. That extra $100 is very, very, well spent.

Ok thanks... I’m convinced. This will be my first engine install so I’d rather get and do the right thing(s) right off the bat.

Fwiw, I believe that AutoZone and the like will rent a hoist through their loaner tool program. It's a cool tool to have, just sayin it in case you don't necessarily want to keep one after the job.
 
Stands are under the axle.

Little too much on the hoist though lol.
 
The hoist is the fine adjustment. I have frame stands.
