Engine temp high

Well I drove the K5 to work and the coolant temp is at the 210 mark. It never runs this high.

I'm going to start with fresh coolant and a new t-stat. Which temp should I use 175,185,195??

Also which is the best way to check to see if my clutch fan is working properly?

195 especially in your climate

On the fan clutch, first see if you can wobble the fan . If you can move it even a little bit, it's probably time for replacement. Also check for oil/dirt around the hub; front or rear. If there is oily/dirty residue,chances are the seal has gone and the clutch is toast.
