$289 for a MagnaFlow hi flow cat and Flowmaster 1 chamber installed. What do y'all think?

Sounds like a fair estimate. However, why do you want only a 1 chamber? A 40 series 2 chamber is plenty loud. But it is your truck, and if that's want you want, I say GO FOR IT.

It will sound cool

Sounds fair to me. I just had dual hi-flow cats and Dynomax ultra flows installed for $250. I supplied the cats and mufflers so that was just for the pipes and labor. Did a GREAT job, too. Really tucked everything up and away. No clearance issues here. Even did a great job of an initial bend right after the header collector so as not to interfere with my shackle bolts.

Oops. Off track. Yeah, good price.

All Tune and Lube in Carrollton at Josey and Keller Springs. recommended by a friend of mine. I am really impressed with the quality of work. Like I said, he really tucked that stuff up there. When we gonna get together to check out each others rigs?!?

$350 here. That includes a pair of Jet-Hot coated headers, dual 2 1/4" pipes, and two glasspack mufflers with my labor. All bolt on too.

Same setup can be had for About $225 with painted headers.
