What's the story on first gen Blazer tailgates "without" Chevrolet imprinted on them like the attachment? Did they start out with the wood grain trim on them that was removed? Are there holes to patch after it was removed?

The smooth tailgates are aftermarket replacements and are cheaper since the mfr doesn't have to pay GM for the rights to the Chevrolet name. It was (is?) popular to put a smooth piece of sheet metal over the script to smooth out the tailgate.

All of the original tailgates had Chevrolet or GMC stamped into them.

Yup.

You will see a similar thing on the '69-'70 grilles.... The OEM ones say CHEVROLET across the center bar, but the cheap repop ones are just blank.

It shouldn't be a deal breaker on an otherwise decent truck, but be sure you know the costs of getting OEM parts to swap in (if original matters to you) and adjust your offer accordingly.
