First time winch use

Since Ive had it 2 yrs sitting in a closet , I have lost the booklet that came with it....
I know I need to rewind my winch before useing it.
Whats good to drag? My s10 Blazer? Should I apply the parking brake,how much?

If I was to do this, yes the S10 will work, and you want a bit of drag on it. Maybe apply enough park brake to make it struggle a bit to pull the weight, but not so much that you are dragging the wheels. I know when Dad had his 16.5 rewound after purchase they used a 5k weight, but I think it was a bit more than was really required.

Is this to strech the cable?

It is done to prevent the cable from pulling down into lower wraps on the drum. When they come from the factory the winding is not tight enough to prevent snagging in the drum, so you respool with weight to ensure the winding is tight.
