Full top mounting bolts

While removing the roof I my 74 it became known that the bolts on two of the mounts are spinning in the roof and I presume are stripped. Has anyone else had this issue and maybe has a remedy other than cutting into the roof itself?

Grind the bolt off.... Replace with a rivet nut, or cut roof panel for accent +;fasten a plate with a nut welded to the backside
