I have all new poly body mounts, good rocker boxes, but no roll cage. If I run doorless should I worry about the body collapsing in without the support of the doors? Will things not line back up when reinstalling doors later on?

Should be fine as far as structure goes, if you’re running around town then you may get hassled by the Leo’s since there’s no lip at the door like on Jeeps.
The dorre really don't do much for stiffening the body. You'll be fine
