How do all of you mount your coolers / ice chests when wheeling?

I searched here and on Pirate, but I (strangely) couldn't find a topic on this. Weird.

Anyway, I am a big "organizer". I like to have a place for everything in the truck, and I hate having to shuffle to get something I want (like soda, a sandwich, or a cold water) out of the cooler.

Requirements:

1.) The cooler needs to be removable (to take to the camp site, or to bring inside the house to load the night before a trip).
2.) It needs to be able to be held in pplace firmly enough that heavy offroading won't make it a projectile.
3.) I have to be able to open it without disassembling anything.

Currently, I have two coolers. I have a stainless Coleman one for longer trips, and smaller "square" igloo type cooler. I have added lockable cam style "latches" to both, so they can be firmly clamped shut. They both have stout handles, and I mounted D-rings in the bed of the truck and I run short ratchet straps to the handles from the d-rings. It holds the cooler down VERY well, but I was wondering what others do in this area?

Is there some kind of positively locking plate deal I could use?

I'd also like something I could use when I get around to buying an ARB style Fridge.

Here's a picture of essentially what I am talking about. This is a picture of my truck (and smaller cooler) in the tank trap in 2007. The bed configuration is different now, due to a different tool box, etc. and the straps are closer together for the cooler, but you get the idea.

I use a ratchet strap and tie it down on the roof rack. This is the best pic I have on short notice:
