How many people would it take to lift a blazer tub from one frame and drop it on another? Assuming the top and interior were removed. Or would it be easier for me to rent a gantry crane or something to help with the swap?

6 guys can do it no problem. 4 if they’re strong. If you get the tires out of the way it’s even easier.
Slide some 2x4’s between the cab and frame and lift?
Yes. Have seen them up on sawhorses to roll frame out and roll new one in.

And an engine hoist. Ran it in one door opening. 4 straps to the rockers and 2 to the back. Run the hoist in at an angle towards the back.
Have the second frame reversed. Spin the whole thing around.

Why spin it?
If not you have to roll the whole thing around the other chassis. Or move the chassis's. If they are opposite of each other, rotate it 180*.
about what is the weight of the tub less doors, interior, top and seats?

Doghouse or not? Easy enough to remove to save a bunch of weight.
Sub not K5, but that's basically what I did to get it off the ground and on a frame by myself.
