Nee wheels and tires on tow rig

So ive tried searching and reading but all the posts ive found on line are old and seem outdated. I have a 2007 2500hd classic silvy cclb 6.0, 4l80 4x4. Getting ready to move back to az in the next year and my tires are gonna need replaced by then. I currently have 16 inch steelies and lt265/75/16 falken ats. Looking at bumping up to 285s and a level kit. Wondering if 17s or 20s would be better for towing in terms of stability. I know they have load range e 20s now but looking for real world feedback from those who have bumped up in wheel size. Also what tires are you seeing best mpg and tread life out of?
 
I personally like a taller sidewall for ride quality, I’ve only ever had 17’s on this body style truck in question so I can’t specifically say that I know 20’s will kill the ride quality on this truck but I know it affected the ride quality on my F250 and that coupled with the price difference in tire sizes @ 20” rims will make me stay 18 or below.
I went with H2 wheels and cut down Chevy center caps and I’m in love with the look and the total investment wasn’t bad and less than what I’d have in cheap aftermarket wheels.

I’ve had excellent luck with Cooper tires, I’ve had several variations of their AT3 Discoverers and I’ve had great mileage out of them on every vehicle I’ve put them on. I had their STMaxx on an F350, great mileage and looked fantastic but some folks complained about the noise (to me for as aggressive as they looked I was very impressed that they were so quiet)
