For a 78 K5 with 350 V8 what would have been the original starter number?

I wonder why if any of these would be correct for a 78 K5 350. 1109064, 1109065, 1109066

All those part numbers will most likely be superseded down to one basic style of a super common 3510 type replacement starter so don’t get hung up on specifics from that GM part number system.

.....aaaand get a mini starter since a) you aren't getting the original part b) modern replacements are garbage compared to originals, c) mini starters crank far better and d) they work better with older wiring because they draw less.

Not like I'm biased or anything. But I've got a mini starter that was used on a circle track car for who knows how many years, bolted right up to my 350, and continues to crank the engine years later like there is no tomorrow even with the half frayed OEM aluminum negative battery cable.

I think some things OEM is a good bet, especially if it's old stuff being refurbished by you and reused. But I had terrible luck with replacement old school starters. Even when new (and pre-china Delco) they didn't crank like the mini starters, nor last as long.
