OK What Makes Smoke Rings out the Tail Pipe

Our daily driver "79 G20" has a 350 with small valves heads with medium chamber (991) , turbo 350, and dual exhaust with turbos. We have had I think, 3 exhaust installed all with turbos. And when it gets cold enough to see the exhaust, you can see smoke rings from the exhaust. The rings come when it is idling or driving.

So just what really does this????

Like actual smoke, or just cold vapor?

The ring itself is produced by an exhaust pulse exiting the cylindrical pipe.
