So after settling on which blazer i am going to work on. on the blazer i am going to use for parts the rockers are good but lightly rusted i have been debating on using them instead of ordering new after reading about the new metal being thin.

Which is the recommended way to go?

oe is best . if light surface clean up good and seal it good . otherwise you will need to deal with aftermarket stuff.

If i could i would use body panels or cut out parts from a donor truck. Aftermarket parts can hit you in the pocket book fast and don't always get a perfect part (case in point i got some replacement rear wheel arches from a very well known distributor and there was 4 hours of body work before i could even use the panel itself it was so dented and creased)
